Ingredients

– 2 cups grated zucchini

– 1/2 cup all-purpose flour

– 1 egg, lightly beaten

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 2 tablespoons olive oil

– 1 cup plain Greek yogurt

– 2 cloves garlic, minced

– 1 tablespoon lemon juice

– 1 tablespoon chopped fresh parsley


Instructions

1. Grate the zucchini and place it in a clean kitchen towel or paper towels. Squeeze out as much moisture as possible.

2. In a medium bowl, combine the grated zucchini, flour, egg, baking powder, salt, and black pepper. Mix well.

3. Heat the olive oil in a large skillet over medium heat.

4. Scoop heaping tablespoons of the zucchini mixture and gently place them in the hot oil, flattening slightly with a spatula.

5. Cook the fritters for 2-3 minutes per side, or until golden brown and crispy.

6. Drain the cooked fritters on a paper towel-lined plate.

7. In a small bowl, mix together the Greek yogurt, minced garlic, lemon juice, and chopped parsley.
