Ingredients
– 1 lb ground Italian sausage
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 1 cup heavy cream
– 1 cup whole milk
– 8 oz cream cheese, softened
– 1 tsp dried oregano
– 1/2 tsp dried basil
– Salt and pepper to taste
– 9 lasagna noodles, broken into 1-inch pieces
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
Instructions
1. 1. In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and crumbled, 5-7 minutes.
2. 2. Add the diced onion and minced garlic. Cook for 2-3 minutes until fragrant.
3. 3. Pour in the chicken broth, heavy cream, and whole milk. Whisk in the softened cream cheese until smooth.
4. 4. Stir in the dried oregano, dried basil, and season with salt and pepper to taste.
5. 5. Add the broken lasagna noodles and bring the soup to a simmer. Cook for 15-20 minutes, or until the noodles are tender.
6. 6. Remove from heat and stir in the shredded mozzarella and grated Parmesan cheese.

Notes
For a thicker soup, let it simmer for an additional 5-10 minutes. You can also add extra cheese on top as a garnish.
