Warm up with this creamy and comforting White Cheddar & Apple Chicken Chili, made with tender chicken, tangy apples, and melted white cheddar cheese. It’s a quick and easy weeknight meal that’s perfect for chilly days.
Ingredients
– 1 lb boneless, skinless chicken breasts, shredded
– 2 Granny Smith apples, peeled and diced
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tbsp olive oil
– 2 tsp chili powder
– 1 tsp ground cumin
– 1 tsp dried oregano
– 1/2 tsp salt
– 1/4 tsp black pepper
– 4 cups chicken broth
– 2 cups shredded white cheddar cheese
– Chopped fresh cilantro for garnish
Instructions
1. – In a large pot or Dutch oven, heat the olive oil over medium heat.
2. – Add the diced onion and sauté for 5 minutes until translucent.
3. – Stir in the minced garlic and cook for an additional 1 minute.
4. – Add the shredded chicken, diced apples, chili powder, cumin, oregano, salt, and pepper. Stir to combine.
5. – Pour in the chicken broth and bring the mixture to a simmer.
6. – Reduce heat and let the chili simmer for 15-20 minutes, stirring occasionally, until thickened.
7. – Remove from heat and stir in the shredded white cheddar cheese until melted and fully incorporated.
8. – Ladle the chili into bowls and garnish with chopped fresh cilantro.
9. – Serve hot with crusty bread or cornbread.
