Description

This creamy, comforting White Bean Pesto Soup is a quick and easy meal that’s packed with flavor. Made with protein-rich white beans, vibrant pesto, and aromatic herbs, it’s a delicious and satisfying dish perfect for any occasion.

Ingredients

– 2 (15-ounce) cans white beans, drained and rinsed

– 4 cups vegetable or chicken broth

– 1/2 cup prepared basil pesto

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. In a large saucepan, combine the drained and rinsed white beans, broth, pesto, garlic, thyme, salt, and pepper.

2. Bring the mixture to a simmer over medium heat, stirring occasionally, until heated through, about 10 minutes.

3. Using an immersion blender or carefully transferring the soup to a blender, puree the soup until smooth and creamy.

4. Serve the White Bean Pesto Soup warm, garnished with additional pesto, fresh basil, and crusty bread, if desired.

Notes

– For a thicker consistency, use less broth.

– Customize the flavor by using different types of pesto, such as sun-dried tomato or walnut pesto.

– Garnish with toasted pine nuts, grated Parmesan, or a drizzle of olive oil for extra flavor and texture.
