Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 8 ounces cremini mushrooms, sliced
– 3 garlic cloves, minced
– 2 teaspoons fresh thyme, chopped
– 2 (15-ounce) cans white beans, drained and rinsed
– 4 cups vegetable broth
– 1 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion and sauté for 5 minutes, until translucent.
3. Add the sliced mushrooms and cook for 8-10 minutes, stirring occasionally, until the mushrooms are tender and lightly browned.
4. Stir in the minced garlic and chopped thyme, and cook for 1 minute until fragrant.
