Description

This cozy White Bean Mushroom Stew is a delicious and nutritious comfort food dish that’s easy to make and packed with flavor. Tender white beans and earthy mushrooms simmered in a rich, savory broth make for a satisfying and nourishing meal.

Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 8 ounces cremini mushrooms, sliced

– 3 garlic cloves, minced

– 2 teaspoons fresh thyme, chopped

– 2 (15-ounce) cans white beans, drained and rinsed

– 4 cups vegetable broth

– 1 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. Add the diced onion and sauté for 5 minutes, until translucent.

3. Add the sliced mushrooms and cook for 8-10 minutes, stirring occasionally, until the mushrooms are tender and lightly browned.

4. Stir in the minced garlic and chopped thyme, and cook for 1 minute until fragrant.

5. Add the drained and rinsed white beans and the vegetable broth. Season with salt and pepper.

6. Bring the mixture to a simmer and let it cook for 15-20 minutes, until the flavors have melded and the stew has thickened slightly.

7. Taste and adjust seasoning as needed.

8. Serve the White Bean Mushroom Stew hot, garnished with additional thyme if desired. Enjoy with crusty bread.

Notes

This stew can be easily adapted to suit your taste preferences. Try adding diced carrots or celery for extra vegetables, or a splash of lemon juice or red wine vinegar for a brightness. For a creamier texture, you can blend a portion of the stew before serving.
