Ingredients

– 8 ounces feta cheese, crumbled

– 4 ounces cream cheese, softened

– 2 tablespoons heavy cream

– 2 tablespoons honey, plus more for drizzling

– 1/4 cup shelled pistachios, roughly chopped

– 1 tablespoon fresh thyme leaves (optional)

– Crackers, bread, or other dippers for serving


Instructions

1. In a medium bowl, combine the crumbled feta, softened cream cheese, and heavy cream. Use a hand mixer or stand mixer fitted with the whisk attachment to whip the mixture until light and fluffy, about 2-3 minutes.

2. Fold in the 2 tablespoons of honey until well combined.

3. Transfer the whipped feta to a serving bowl and smooth the top. Drizzle additional honey over the top.

4. Sprinkle the chopped pistachios and fresh thyme leaves (if using) over the whipped feta.
