Description

This Watermelon and Feta Salad with Balsamic Glaze is a refreshing and flavorful side dish that’s perfect for hot summer days. The juicy watermelon, creamy feta, and tangy balsamic glaze come together to create a delightful balance of sweet and savory.


Ingredients

– 4 cups cubed watermelon

– 1 cup crumbled feta cheese

– 1/4 cup balsamic vinegar

– 2 tablespoons olive oil

– 1 tablespoon honey

– 1/4 cup chopped fresh mint

– 1/4 cup chopped fresh basil

– Salt and pepper to taste


Instructions

1. In a large bowl, combine the cubed watermelon and crumbled feta cheese.

2. In a small saucepan, combine the balsamic vinegar and honey. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the mixture has reduced by about half and thickened into a glaze. Remove from heat and let cool slightly.

3. Drizzle the balsamic glaze over the watermelon and feta, and gently toss to combine.

4. Add the olive oil, chopped mint, and chopped basil. Season with salt and pepper to taste.

5. Serve the Watermelon and Feta Salad chilled or at room temperature.

Notes

For a variation, you can also add thinly sliced red onion or toasted pine nuts to the salad. This dish is best enjoyed immediately, but leftovers can be stored in the refrigerator for up to 2 days.
