Instructions

1. 1. In a large bowl, combine the ground venison, kosher salt, black pepper, garlic powder, and prague powder. Mix well until all the seasonings are evenly distributed.

2. 2. Form the seasoned venison into a log shape, about 12 inches long.

3. 3. Wrap the venison log tightly in cheesecloth or butcher paper, twisting the ends to secure.

4. 4. Refrigerate the wrapped sausage for 2-3 days to allow the flavors to blend.
