Description

This irresistible Vegetarian Herb Stuffing is the perfect holiday side dish or anytime comfort food. It’s packed with fresh herbs and comes together in just 30 minutes for a delicious, stress-free meal.


Ingredients

– 1 loaf of day-old whole wheat bread, cubed

– 1 onion, diced

– 3 celery stalks, diced

– 3 cloves garlic, minced

– 1/4 cup chopped fresh parsley

– 2 tablespoons chopped fresh sage

– 1 tablespoon chopped fresh thyme

– 1 teaspoon dried rosemary

– 1 1/2 cups vegetable broth

– 2 tablespoons olive oil

– Salt and pepper to taste


Instructions

1. – Preheat oven to 375°F. Grease a 9×13 baking dish.

2. – In a large bowl, toss together the bread cubes, onion, celery, garlic, parsley, sage, thyme, and rosemary.

3. – Drizzle the vegetable broth and olive oil over the mixture and gently toss to coat.

4. – Transfer the stuffing to the prepared baking dish and bake for 25-30 minutes, stirring halfway, until golden brown and crispy.

5. – Serve warm and enjoy!

Notes

For a richer flavor, use 1/2 cup melted butter instead of olive oil. You can also add chopped mushrooms, pecans, or dried cranberries to the stuffing.
