Ingredients
– 2 pounds Yukon Gold potatoes, washed and cut into 1-inch pieces
– 1/4 cup olive oil

– 1 teaspoon dried thyme
– 1/2 teaspoon sea salt
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large pot, cover the potato pieces with cold water and bring to a boil over high heat. Reduce the heat to medium and simmer for 15-20 minutes, or until the potatoes are fork-tender.
3. Drain the potatoes and transfer them to a large baking sheet. Using a fork or potato masher, gently smash each potato piece, being careful not to break them apart completely.
