Description

Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 1 egg

– 1 teaspoon vanilla extract

– 1 (20 oz) can pineapple slices, drained and chopped

– 1/4 cup brown sugar


Instructions

1. – Preheat oven to 350°F. Line a baking sheet with parchment paper.

2. – In a medium bowl, whisk together the flour, baking powder, and salt.

3. – In a large bowl, cream the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla.

4. – Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

5. – Fold in the chopped pineapple and brown sugar.

6. – Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

7. – Bake for 12-15 minutes, until the edges are lightly golden.

8. – Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra pineapple flavor, you can add a teaspoon of pineapple extract to the dough. Store cookies in an airtight container for up to 1 week.
