Ingredients

– 1 cup (2 sticks) unsalted butter, softened

– 1 cup granulated sugar

– 1 cup packed brown sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 1 cup ube puree

– 1 1/4 cups all-purpose flour

– 3/4 cup unsweetened cocoa powder

– 1 teaspoon baking powder

– 1/2 teaspoon salt


Instructions

1. – Preheat your oven to 350°F (177°C). Line two baking sheets with parchment paper.

2. – In a large bowl, cream the softened butter and both sugars together until light and fluffy, about 2-3 minutes.

3. – Beat in the eggs one at a time, then stir in the vanilla and ube puree until well combined.

4. – In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.

5. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

6. – Scoop the dough by rounded tablespoons onto the prepared baking sheets, spacing them about 2 inches apart.

7. – Bake for 7-9 minutes, or until the edges are set but the centers are still slightly soft.

8. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
