Description

Indulge in the rich, creamy flavors of this authentic Tuscan White Bean Soup. This comforting dish is packed with tender white beans, aromatic herbs, and a velvety broth that’s sure to warm you up on a chilly day.


Ingredients

– 1 pound dried white beans, soaked overnight and drained

– 1 onion, diced

– 4 cloves garlic, minced

– 2 tablespoons olive oil

– 4 cups vegetable or chicken broth

– 2 sprigs fresh rosemary

– 1 bay leaf

– 1 teaspoon dried thyme

– Salt and pepper to taste

– Grated Parmesan cheese, for serving (optional)


Instructions

1. In a large pot, sauté the onion and garlic in olive oil over medium heat until softened, about 5 minutes.

2. Add the soaked and drained white beans, broth, rosemary, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the beans are very soft.

3. Remove the rosemary sprigs and bay leaf. Using an immersion blender, blend the soup until smooth and creamy.

4. Season with salt and pepper to taste.

5. Serve the Tuscan white bean soup hot, garnished with grated Parmesan cheese if desired.

Notes

For a heartier soup, you can add cooked Italian sausage or diced ham. Store any leftover soup in the refrigerator for up to 4 days or in the freezer for up to 3 months.
