Description

Ingredients

6 fresh apricots, halved and pitted

1 cup water

1/4 cup granulated sugar

2 tablespoons fresh lemon juice

1 cup whole-milk ricotta cheese

Instructions:

1. In a medium saucepan, combine the apricot halves, water, sugar, and lemon juice.

2. Bring the mixture to a simmer over medium heat and cook for 5 minutes, or until the apricots are softened and the liquid has thickened slightly.

3. Remove the poached apricots from the heat and let cool slightly.

4. Divide the poached apricots among serving bowls or plates. Top each portion with a dollop of ricotta cheese.
