Ingredients
– 1 cup finely grated carrots

– 1/2 cup powdered sugar
– 1 teaspoon vanilla extract
– 1/4 cup unsweetened shredded coconut (for coating)
Instructions
1. In a medium bowl, combine the grated carrots, cream cheese, powdered sugar, and vanilla extract. Mix until the ingredients are well incorporated and the mixture is smooth.
2. Using a small cookie scoop or spoon, scoop out the mixture and roll it into bite-sized balls, about 1-inch in diameter.
3. Pour the shredded coconut into a shallow bowl or plate. Gently roll the truffle balls in the coconut until fully coated.
4. Place the coated truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes to allow them to firm up.
5. Serve the chilled Turkish Carrot Truffles and enjoy!
Notes
For a richer flavor, you can substitute dark chocolate or cocoa powder for the coconut coating. These truffles can be stored in the refrigerator for up to 1 week.
