– 1 cup finely grated carrots

– 8 ounces cream cheese, softened

– 1/2 cup powdered sugar

– 1/4 cup unsweetened shredded coconut (for coating)


Instructions

1. In a medium bowl, combine the grated carrots, cream cheese, powdered sugar, and vanilla extract. Mix until the ingredients are well incorporated and the mixture is smooth.

2. Using a small cookie scoop or spoon, scoop out the mixture and roll it into bite-sized balls, about 1-inch in diameter.

3. Pour the shredded coconut into a shallow bowl or plate. Gently roll the truffle balls in the coconut until fully coated.
