Ingredients

– 1 medium head green cabbage, cored and chopped

– 2 medium potatoes, peeled and cubed

– 1 large onion, diced

– 3 cloves garlic, minced

– 2 tomatoes, diced

– 4 cups chicken or vegetable broth

– 2 tablespoons tomato paste

– 1 teaspoon paprika

– 1 teaspoon ground cumin

– 1 teaspoon dried oregano

– 1 bay leaf

– 2 tablespoons lemon juice

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. In a large pot or Dutch oven, sauté the onions and garlic in a bit of olive oil over medium heat until fragrant and translucent, about 5 minutes.

2. Add the chopped cabbage, potatoes, tomatoes, tomato paste, paprika, cumin, oregano, and bay leaf. Pour in the broth and stir to combine.

3. Bring the mixture to a boil, then reduce heat and let the stew simmer for 20-25 minutes, or until the vegetables are tender.

4. Remove the bay leaf. Stir in the lemon juice and season with salt and pepper to taste.

5. Serve the Turkish Cabbage Stew hot, garnished with chopped parsley. Enjoy with crusty bread.

Notes

For a heartier meal, you can add cooked chickpeas or white beans to the stew. Adjust seasoning to your taste preferences.
