Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 3 garlic cloves, minced
– 2 (28 oz) cans diced tomatoes
– 4 cups chicken or vegetable broth
– 1 teaspoon dried basil
– 1/2 teaspoon dried oregano
– Salt and pepper to taste
– For the Dumplings:
– 1 cup all-purpose flour
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 3 tablespoons cold unsalted butter, cubed
– 3/4 cup shredded cheddar cheese
– 1/2 cup milk
Instructions
1. – In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 5 minutes until translucent.
2. – Add the garlic and cook for 1 minute until fragrant.
3. – Pour in the diced tomatoes and broth. Stir in the basil, oregano, salt, and pepper. Bring to a simmer and let the soup cook for 15 minutes.
4. – Meanwhile, make the dumplings. In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cheddar cheese.
5. – Pour in the milk and stir just until a soft dough forms.
6. – Drop the dumpling dough by heaping tablespoons onto the simmering soup. Cover and cook for 12-15 minutes, until the dumplings are cooked through.
7. – Serve the tomato soup hot, garnished with additional cheese or fresh basil if desired.
Notes
For a thicker soup, use an immersion blender to partially purée the tomatoes. You can also use cream or milk in place of the broth for an even creamier texture. Leftovers can be stored in the refrigerator for up to 4 days.
