Ingredients

– 2 tablespoons unsalted butter

– 1 onion, diced

– 2 cloves garlic, minced

– 2 (28-ounce) cans crushed tomatoes

– 2 cups chicken or vegetable broth

– 1 teaspoon dried basil

– 1 teaspoon dried oregano

– Salt and pepper to taste

– 1 cup all-purpose flour

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 3 tablespoons cold unsalted butter, cubed

– 1/2 cup shredded cheddar cheese

– 1/4 cup milk


Instructions

1. 1. In a large pot, melt the 2 tablespoons of butter over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes.

2. 2. Stir in the crushed tomatoes, broth, basil, oregano, salt, and pepper. Bring the soup to a simmer and let it cook for 10 minutes.

3. 3. In a medium bowl, whisk together the flour, baking powder, and 1/2 teaspoon of salt. Cut in the 3 tablespoons of cold butter until the mixture resembles coarse crumbs. Stir in the cheddar cheese and milk until just combined.

4. 4. Drop the dumpling dough by heaping tablespoonfuls onto the simmering soup. Cover and cook for 15 minutes, or until the dumplings are cooked through.

5. 5. Serve the Tomato Soup with the Cheesy Herbed Dumplings warm and enjoy!

Notes
