Ingredients

– 1 cup unsalted butter, softened

– 1/2 cup granulated sugar

– 1/4 cup light brown sugar

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 1/4 teaspoon salt

– 1/2 cup chopped toffee bits


Instructions

1. – Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. – In a large mixing bowl, cream together the softened butter and both sugars until light and fluffy, about 2-3 minutes.

3. – Beat in the vanilla extract.

4. – In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture, mixing just until combined.

5. – Fold in the chopped toffee bits.

6. – Roll the dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheet.

7. – Bake for 10-12 minutes, or until the cookies are lightly golden around the edges.

8. – Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

– For extra crunch, you can roll the dough balls in coarse sugar before baking.
