Ingredients
– 1 (12-15 lb) whole turkey, thawed
– 1 cup unsalted butter, softened
– 2 tablespoons chopped fresh thyme
– 2 tablespoons chopped fresh rosemary
– 2 tablespoons chopped fresh sage
– 1 tablespoon salt
– 1 teaspoon black pepper
– 1 large onion, quartered
– 4 cloves garlic, peeled
– 2 cups turkey or chicken broth
Instructions
1. 1. Preheat oven to 325°F. Remove turkey from packaging and pat dry with paper towels.
2. 2. In a small bowl, mix together softened butter, thyme, rosemary, sage, salt, and pepper.
3. 3. Loosen the skin of the turkey and spread the herb butter mixture underneath, covering as much of the meat as possible.
4. 4. Stuff the cavity of the turkey with the onion and garlic cloves.
5. 5. Place the turkey in a large roasting pan and pour the broth into the bottom of the pan.
6. 6. Roast the turkey for 3-3.5 hours, basting every 30 minutes, until a meat thermometer inserted into the thickest part of the thigh reads 165°F.
7. 7. Remove the turkey from the oven and let rest for 30 minutes before slicing and serving.
Notes
For a crispier skin, you can rub the outside of the turkey with a small amount of vegetable oil before seasoning. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
