Description

Ingredients

– 1 lb fresh green peas, shelled

– 1 ripe pear, diced

– 4 oz diced pancetta

– 1 tablespoon olive oil

– 1 clove garlic, minced

– 1/4 cup chicken or vegetable broth

– 1 tablespoon fresh thyme, chopped

– Salt and pepper to taste


Instructions

1. – In a large skillet, cook the diced pancetta over medium heat until crispy, about 5-7 minutes. Remove pancetta from the pan and set aside.

2. – Add the olive oil to the skillet and sauté the minced garlic for 1 minute until fragrant.

3. – Add the fresh green peas and diced pear to the skillet. Pour in the broth and season with salt and pepper.

4. – Cook for 5-7 minutes, stirring occasionally, until the peas are tender and the pear is softened.

5. – Remove from heat and stir in the cooked pancetta and fresh thyme.

6. – Serve the Thanksgiving Peas with Pear and Pancetta warm, alongside your holiday feast.

Notes

This dish can be made ahead of time and reheated before serving. You can also use frozen peas if fresh are not available. For a heartier version, add cooked, crumbled bacon in addition to the pancetta.
