Ingredients

– 1 pound boneless, skinless chicken breasts, cubed

– 1 tablespoon vegetable oil

– 1 onion, diced

– 3 cloves garlic, minced

– 2 tablespoons Thai green curry paste

– 1 (13.5 oz) can coconut milk

– 1 tablespoon fish sauce

– 1 tablespoon brown sugar

– Juice of 1 lime

– Salt and pepper to taste

– 6 large tortillas

– Chopped cilantro for garnish


Instructions

1. In a large skillet, heat the vegetable oil over medium-high heat.

2. Add the cubed chicken and cook for 5-7 minutes, or until lightly browned on all sides.

3. Add the diced onion and minced garlic to the skillet and sauté for 2-3 minutes until fragrant.

4. Stir in the Thai green curry paste and cook for 1 minute to toast the spices.

5. Pour in the coconut milk, fish sauce, and brown sugar. Bring the mixture to a simmer and cook for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.

6. Remove from heat and stir in the lime juice. Season with salt and pepper to taste.

7. Warm the tortillas according to package instructions.

8. Spoon the Thai green curry chicken into the center of each tortilla, then fold and roll the burrito.

9. Garnish with chopped cilantro and serve hot.

Notes
