Ingredients
– 1 pound boneless, skinless chicken breasts, pounded to 1/2-inch thickness
– 1 cup all-purpose flour
– 1 teaspoon ground ginger
– 1 teaspoon ground coriander
– 1 teaspoon ground cumin
– 1/2 teaspoon cayenne pepper
– 1 cup panko breadcrumbs
– 1/2 cup vegetable oil
– 2 cups shredded cabbage
– 1 cup shredded carrots
– 2 tablespoons rice vinegar
– 1 tablespoon lime juice
– 1 tablespoon honey
– 1 teaspoon sesame oil
– 1/4 cup chopped fresh cilantro
– Salt and black pepper to taste
– 4 soft, toasted burger buns
Instructions
1. In a shallow dish, combine the flour, ginger, coriander, cumin, and cayenne pepper.
2. Dredge the chicken breasts in the seasoned flour, coating both sides.
3. In a large skillet, heat the vegetable oil over medium-high heat.
4. Fry the chicken breasts for 3-4 minutes per side, or until golden-brown and cooked through. Drain on a paper towel-lined plate.
5. In a medium bowl, toss together the shredded cabbage, carrots, rice vinegar, lime juice, honey, sesame oil, and cilantro. Season with salt and pepper to taste.
6. Place the fried chicken breasts on the toasted buns and top with the Thai slaw.
7. Serve the Thai Fried Chicken Sandwiches immediately, while the chicken is hot and crispy.
Notes
For a spicier version, add more cayenne pepper to the flour mixture. You can also use a blend of shredded red and green cabbage for a more vibrant slaw.
