Ingredients
– 2 cups thinly sliced English cucumbers
– 1 pound grilled or poached chicken breast, diced
– 1/4 cup thinly sliced red onion
– 2 tablespoons chopped fresh cilantro
– 2 tablespoons chopped fresh mint
– 2 tablespoons rice vinegar
– 1 tablespoon lime juice
– 1 tablespoon fish sauce
– 1 teaspoon honey
– 1/4 teaspoon crushed red pepper flakes
– Salt and pepper to taste
Instructions
1. In a large bowl, combine the sliced cucumbers, diced chicken, red onion, cilantro, and mint.
2. In a small bowl, whisk together the rice vinegar, lime juice, fish sauce, honey, and crushed red pepper flakes.
3. Pour the dressing over the salad and toss gently to coat.
4. Season with salt and pepper to taste.
5. Serve chilled or at room temperature.
Notes
