Ingredients

8 ounces wide rice noodles

1/2 cup creamy peanut butter

3 tablespoons soy sauce

2 tablespoons lime juice

1 tablespoon honey

1 teaspoon red chili flakes (or to taste)

2 garlic cloves, minced

1 inch fresh ginger, grated

1/2 cup unsweetened coconut milk

2 tablespoons water

1 cup shredded cabbage

1 cup shredded carrots

2 green onions, sliced

1/4 cup chopped fresh cilantro

2 tablespoons chopped roasted peanuts


Instructions

1. Cook the rice noodles according to package instructions. Drain and rinse with cold water.
