Description

Enjoy these crispy, golden Sweet Potato Rounds topped with a creamy, tangy goat cheese spread. This easy-to-make dish is perfect as an appetizer, side, or light meal.

Ingredients

– 2 medium sweet potatoes, sliced into 1/2-inch rounds

– 2 tablespoons olive oil

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 4 ounces goat cheese, softened

– 2 tablespoons heavy cream

– 1 tablespoon chopped fresh thyme

Instructions

1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. – Arrange the sweet potato rounds in a single layer on the prepared baking sheet. Brush the tops with olive oil and season with salt and pepper.

3. – Bake for 20-25 minutes, flipping halfway, until the sweet potatoes are tender and lightly browned.

4. – In a small bowl, mix together the goat cheese, heavy cream, and thyme until well combined.

5. – Top the roasted sweet potato rounds with the creamy goat cheese mixture.

6. – Serve immediately and enjoy!

Notes

For a creamier texture, add an extra tablespoon of heavy cream to the goat cheese mixture. You can also garnish with chopped fresh parsley or a drizzle of honey.
