Ingredients
– 2 medium sweet potatoes, sliced into 1/2-inch rounds
– 2 tablespoons olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 4 ounces goat cheese, softened
– 2 tablespoons heavy cream
– 1 tablespoon chopped fresh thyme
Instructions
1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. – Arrange the sweet potato rounds in a single layer on the prepared baking sheet. Brush the tops with olive oil and season with salt and pepper.
3. – Bake for 20-25 minutes, flipping halfway, until the sweet potatoes are tender and lightly browned.
