Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup granulated sugar

– 1 teaspoon salt

– 2 large eggs

– 1 cup light brown sugar

– 1 cup mashed sweet potatoes (about 2 medium sweet potatoes)

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground nutmeg

– 1/4 teaspoon ground ginger

– 1 cup evaporated milk


Instructions

1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish.

2. In a food processor, pulse the flour, butter, granulated sugar, and salt until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking dish.

3. In a large bowl, whisk together the eggs, brown sugar, mashed sweet potatoes, cinnamon, nutmeg, and ginger until well combined. Gradually whisk in the evaporated milk.

4. Pour the sweet potato filling over the crust and spread it evenly.

5. Bake for 40-45 minutes, or until the center is set. Allow the bars to cool completely before cutting into squares.
