Description

Ingredients

– 2 medium sweet potatoes, peeled and grated

– 1 cup panko breadcrumbs

– 2 eggs, beaten

– 1/2 cup grated parmesan cheese

– 1 teaspoon garlic powder

– 1 teaspoon paprika

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup burrata cheese, for dipping

– 1/2 cup roasted, salted pistachios, chopped


Instructions

1. In a large bowl, combine the grated sweet potatoes, panko breadcrumbs, beaten eggs, parmesan cheese, garlic powder, paprika, salt, and pepper. Mix well until the ingredients are evenly distributed.

2. Form the sweet potato mixture into small, bite-sized croquettes, about 2 tablespoons each.

3. In a large skillet, heat 1/2 inch of oil over medium-high heat. Working in batches, fry the sweet potato croquettes for 2-3 minutes per side, or until golden brown and crispy.

4. Transfer the fried croquettes to a paper towel-lined plate to drain excess oil.

5. Arrange the croquettes on a serving platter and serve with the creamy burrata dip and chopped pistachio crunch topping.

Notes

For a variation, try serving the croquettes with a honey mustard or sriracha mayo dip. The croquettes can also be baked instead of fried for a healthier option.
