Description

Indulge in the classic flavors of Sweet Potato Casserole with Marshmallows, a delightful Thanksgiving side dish that’s easy to prepare and sure to impress your guests.

Ingredients

– 3 lbs sweet potatoes, peeled and cubed

– 1/2 cup unsalted butter, melted

– 1/2 cup brown sugar

– 2 large eggs

– 1/2 cup milk

– 1 tsp vanilla extract

– 1/2 tsp ground cinnamon

– 1/4 tsp ground nutmeg

– 1/4 tsp salt

– 2 cups miniature marshmallows

Instructions

1. 1. Preheat the oven to 375°F. Grease a 9×13-inch baking dish.

2. 2. In a large pot, cover the sweet potato cubes with water and bring to a boil. Reduce heat and simmer until tender, about 15-20 minutes. Drain and mash the sweet potatoes until smooth.

3. 3. In a large bowl, combine the mashed sweet potatoes, melted butter, brown sugar, eggs, milk, vanilla, cinnamon, nutmeg, and salt. Mix well until fully incorporated.

4. 4. Transfer the sweet potato mixture to the prepared baking dish and spread evenly. Top with the marshmallows.

5. 5. Bake for 25-30 minutes, or until the marshmallows are golden brown and the casserole is heated through.

6. 6. Serve hot and enjoy!

Notes

For a crunchier topping, broil the casserole for 2-3 minutes after baking. You can also add chopped pecans or walnuts to the topping for extra texture and flavor.
