Ingredients
– 2 large sweet onions, diced
– 1 cup dried figs, chopped
– 1 cup freshly squeezed orange juice
– 1/2 cup apple cider vinegar
– 1/4 cup brown sugar
– 2 teaspoons Dijon mustard
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground ginger
– 1/4 teaspoon ground cloves
– 1/4 teaspoon salt
Instructions
1. In a large saucepan, combine the diced sweet onions, chopped dried figs, orange juice, apple cider vinegar, brown sugar, Dijon mustard, cinnamon, ginger, cloves, and salt.
2. Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer, stirring occasionally, for 20-25 minutes, or until the onions are tender and the chutney has thickened.
3. Remove the chutney from the heat and let it cool slightly. Taste and adjust seasoning as needed.
4. Transfer the chutney to a clean jar or airtight container and refrigerate for up to 2 weeks.
