Description

Ingredients

– 4 cups shredded green cabbage

– 1 cup shredded carrots

– 1/4 cup apple cider vinegar

– 2 tablespoons olive oil

– 1 tablespoon honey

– 1 teaspoon Dijon mustard

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. 1. In a large bowl, combine the shredded cabbage and carrots.

2. 2. In a small bowl, whisk together the apple cider vinegar, olive oil, honey, Dijon mustard, salt, and pepper.

3. 3. Pour the dressing over the cabbage and carrots and toss to coat evenly.

4. 4. Refrigerate for at least 15 minutes before serving to allow the flavors to meld.

Notes

For best texture, shred the cabbage and carrots using a food processor or mandoline slicer. You can also substitute 1 cup of thinly sliced red cabbage for some of the green cabbage. Leftovers will keep in the fridge for up to 4 days.
