Ingredients
– Rice paper wrappers
– Carrots, julienned
– Cucumber, julienned
– Red bell pepper, julienned
– Vermicelli noodles
– Fresh mint leaves
– Fresh cilantro
– Peanut sauce (or your favorite dipping sauce)
Instructions
1. – Soak the rice paper wrappers in warm water until softened.
2. – Place the wrapper on a clean surface and layer the vegetables and noodles in the center.
3. – Fold the bottom edge over the filling, then fold in the sides and roll up tightly.
4. – Serve the summer rolls immediately with the peanut dipping sauce.
Notes
For best results, have all your ingredients prepped and ready before assembling the rolls. You can also make these rolls ahead of time and refrigerate them until ready to serve.
