Description

Ingredients

– 12 ounces linguine or spaghetti

– 2 cups cherry tomatoes, halved

– 1 cup fresh basil leaves

– 1/2 cup pine nuts

– 3 cloves garlic, minced

– 1/2 cup grated Parmesan cheese, plus more for serving

– 1/3 cup olive oil

– 1/4 cup lemon juice

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. In a food processor, combine the basil, pine nuts, garlic, Parmesan, olive oil, lemon juice, salt, and pepper. Blend until a smooth pesto sauce forms.

3. In a large bowl, toss the cooked pasta with the pesto sauce until evenly coated.

4. Stir in the halved cherry tomatoes.

5. Serve the Summer Pesto Pasta warm, garnished with additional Parmesan cheese if desired.

Notes

For a creamier texture, stir in a few tablespoons of reserved pasta cooking water to the pesto sauce before tossing with the pasta. You can also adjust the amount of pesto to your personal taste preference.
