Description

Sumac Cucumbers are a bright, tangy, and refreshing side dish that’s perfect for any occasion. Thinly sliced cucumbers are tossed in a simple dressing made with sumac, lemon juice, olive oil, and herbs, creating a flavorful and easy-to-prepare side that complements a wide variety of main dishes.

Ingredients

– 3 English cucumbers, thinly sliced

– 2 tablespoons sumac

– 1/4 cup fresh lemon juice

– 2 tablespoons olive oil

– 2 tablespoons chopped fresh parsley

– 1 teaspoon kosher salt

– 1/2 teaspoon freshly ground black pepper

Instructions

1. In a large bowl, combine the sliced cucumbers, sumac, lemon juice, olive oil, parsley, salt, and pepper. Toss gently to coat the cucumbers evenly.

2. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

3. Serve chilled or at room temperature as a refreshing side dish.

Notes

For added crunch, you can sprinkle the Sumac Cucumbers with toasted pine nuts or sliced almonds just before serving. To make ahead, prepare the dish up to 2 days in advance and keep refrigerated until ready to serve.
