Ingredients
– 1 pound ground beef
– 1 tablespoon chili powder
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon cumin
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 cups fresh corn kernels
– 2 tablespoons mayonnaise
– 1 tablespoon sour cream
– 1 tablespoon lime juice
– 1/4 cup crumbled cotija cheese
– 8 small flour tortillas
– Chopped cilantro, for garnish
Instructions
1. In a large bowl, combine the ground beef, chili powder, garlic powder, onion powder, cumin, salt, and black pepper. Mix well and form into 8 equal-sized patties.
2. Heat a large skillet or griddle over high heat. Working in batches, cook the beef patties for 2-3 minutes per side, or until well-seared and cooked through.
3. In a separate bowl, mix together the corn, mayonnaise, sour cream, and lime juice. Season with salt and pepper to taste.
4. Warm the tortillas according to package instructions.
5. To assemble, place a beef patty in each tortilla and top with a generous spoonful of the street corn mixture. Sprinkle with the cotija cheese and chopped cilantro.
6. Serve immediately and enjoy!
Notes
For extra flavor, try grilling the corn before mixing it into the street corn salsa. You can also add thinly sliced red onion or diced jalapeño for a little extra kick.
