Ingredients
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– 1/2 teaspoon baking powder
– 1/4 teaspoon salt
– 1 cup strawberry preserves
– 1 (14 oz) package Pop-Tarts, cut into 1-inch pieces
Instructions
1. 1. Preheat oven to 350°F. Grease a 9×13-inch baking pan.
2. 2. In a large bowl, beat the butter and sugar together until light and fluffy. Beat in the egg and vanilla.
3. 3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
4. 4. Press half the cookie dough into the prepared baking pan. Spread the strawberry preserves evenly over the dough. Sprinkle the chopped Pop-Tart pieces over the preserves.
5. 5. Drop the remaining cookie dough by tablespoonfuls over the Pop-Tart layer, spreading to cover as much as possible.
6. 6. Bake for 25-30 minutes, until the top is lightly golden. Allow to cool completely before cutting into bars.
