Ingredients
– 1 cup broccoli florets
– 1 cup cauliflower florets
– 1 cup diced carrots
– 1 cup snow peas
– 1 cup diced zucchini
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– 1 tablespoon lemon juice
– 1 teaspoon dried thyme
– Salt and pepper to taste
Instructions
1. 1. In a large steamer pot, bring 1 inch of water to a boil.
2. 2. Add the broccoli, cauliflower, carrots, snow peas, and zucchini. Cover and steam for 5-7 minutes, or until the vegetables are tender-crisp.
3. 3. In a small bowl, whisk together the garlic, olive oil, lemon juice, and dried thyme.
4. 4. Transfer the steamed vegetables to a serving bowl and drizzle the garlic-lemon dressing over the top. Toss gently to coat.
