Stamppot is a beloved Dutch national dish that combines mashed potatoes with various vegetables and sausage, resulting in a comforting and flavorful one-pot meal. Ingredients
– 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes
– 1 cup whole milk
– 4 tablespoons unsalted butter
– 1 medium onion, diced
– 1 pound smoked sausage, sliced
– 2 cups sauerkraut, drained
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons chopped fresh parsley
Instructions
1. In a large pot, cover the potato cubes with cold water and bring to a boil over high heat. Reduce heat to medium-low and simmer for 15-20 minutes, or until the potatoes are fork-tender.
2. Drain the potatoes and return them to the pot. Add the milk and butter, and mash the potatoes until smooth and creamy.
3. In a separate skillet, cook the onion over medium heat until translucent, about 5 minutes. Add the sliced sausage and sauerkraut, and cook for an additional 5-7 minutes, stirring occasionally.
4. Fold the sausage and sauerkraut mixture into the mashed potatoes. Season with salt and pepper.
5. Serve the Stamppot warm, garnished with chopped fresh parsley.

For a richer flavor, you can add a splash of heavy cream or sour cream to the mashed potatoes. Experiment with different types of sausage, such as bratwurst or kielbasa, to find your favorite variation.
