Description

Enjoy a comforting, homemade bowl of creamy split pea soup, simmered with aromatic vegetables and herbs for a satisfying and nourishing meal.


Ingredients

– 1 pound green split peas, rinsed

– 1 onion, diced

– 2 carrots, peeled and diced

– 2 celery stalks, diced

– 3 cloves garlic, minced

– 6 cups vegetable or chicken broth

– 1 bay leaf

– 1 teaspoon dried thyme

– Salt and black pepper to taste


Instructions

1. In a large pot, sauté the onion, carrots, and celery in a little olive oil over medium heat until softened, about 5-7 minutes.

2. Add the garlic and cook for 1 minute until fragrant.

3. Stir in the rinsed split peas, broth, bay leaf, and thyme. Bring to a boil.

4. Reduce heat to low, cover, and simmer for 30-40 minutes, stirring occasionally, until the peas are very soft and the soup has thickened.

5. Remove the bay leaf. Use an immersion blender or regular blender to purée the soup to your desired consistency.

6. Season with salt and pepper to taste.

7. Serve the split pea soup hot, garnished with croutons, chopped parsley, and a drizzle of olive oil, if desired.

Notes

For a creamier texture, you can blend part of the soup and leave some peas whole. Adjust consistency with more broth if needed. Store leftovers in the refrigerator for up to 5 days or freeze for longer storage.
