Ingredients

– 24 fresh mushrooms, stems removed and finely chopped

– 1 pound spicy Italian sausage, casings removed

– 1/2 cup shredded mozzarella cheese

– 1/4 cup grated Parmesan cheese

– 1 clove garlic, minced

– 1 teaspoon dried oregano

– 1/4 teaspoon crushed red pepper flakes

– Salt and black pepper, to taste

Instructions

1. Preheat oven to 400°F (200°C).

2. In a skillet over medium heat, cook the sausage until browned and crumbled, 5-7 minutes. Drain excess fat.

3. In a bowl, combine the chopped mushroom stems, cooked sausage, mozzarella, Parmesan, garlic, oregano, and red pepper flakes. Season with salt and pepper.

4. Stuff the mushroom caps evenly with the sausage mixture.

5. Arrange the stuffed mushrooms on a baking sheet. Bake for 15-18 minutes, or until the mushrooms are tender and the filling is hot and bubbly.

6. Serve immediately, garnished with additional Parmesan if desired.

Notes

For a creamier filling, you can add a few tablespoons of cream cheese to the sausage mixture. You can also experiment with different cheese blends, such as cheddar or Parmesan.
