Ingredients
– 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 tbsp vegetable oil
– 3 cloves garlic, minced
– 1 tbsp grated fresh ginger
– 1/4 cup low-sodium soy sauce
– 2 tbsp rice vinegar
– 1 tbsp honey
– 1 tsp red pepper flakes
– 1/4 tsp ground black pepper
– 2 cups cooked white rice, for serving
Instructions
1. 1. In a large skillet, heat the vegetable oil over medium-high heat.
2. 2. Add the chicken and cook for 5-6 minutes, stirring occasionally, until browned on all sides.
3. 3. Add the garlic and ginger and cook for 1 minute, until fragrant.
4. 4. In a small bowl, whisk together the soy sauce, rice vinegar, honey, red pepper flakes, and black pepper.
5. 5. Pour the sauce into the skillet and bring to a simmer. Cook for 2-3 minutes, until the sauce has thickened slightly.
6. 6. Serve the Spicy Ginger Chicken immediately over cooked white rice.
Notes
For extra heat, increase the amount of red pepper flakes. You can also substitute boneless, skinless chicken thighs for the breasts. Leftovers can be stored in the refrigerator for up to 3 days.
