Crisp, savory, and packed with bold flavors, these Spicy Cheddar Jalapeño Cornbread Waffles are a quick and easy breakfast or brunch treat.
Ingredients
– 1 cup all-purpose flour
– 1 cup cornmeal
– 2 teaspoons baking powder
– 1 teaspoon salt
– 1 teaspoon paprika
– 1/2 teaspoon baking soda
– 1 cup buttermilk
– 2 eggs
– 3 tablespoons unsalted butter, melted
– 1 cup shredded cheddar cheese
– 2 jalapeños, seeded and finely chopped
Instructions
1. – Preheat a waffle iron to medium-high heat.
2. – In a large bowl, whisk together the flour, cornmeal, baking powder, salt, paprika, and baking soda.
3. – In a separate bowl, whisk together the buttermilk, eggs, and melted butter.
4. – Pour the wet ingredients into the dry ingredients and stir just until combined. Fold in the cheddar cheese and jalapeños.
5. – Spray the waffle iron with nonstick cooking spray. Scoop the batter onto the hot waffle iron, using about 1/2 cup of batter per waffle. Cook for 3-4 minutes, until golden brown and crispy.
6. – Serve the waffles hot, with your desired toppings.
Notes
These waffles can be made ahead and reheated in the oven or toaster. They also freeze well for up to 3 months.
