Ingredients
– 24 ounces cream cheese, softened
– 1 cup granulated sugar
– 4 large eggs
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 1/2 cups graham cracker crumbs
– 6 tablespoons unsalted butter, melted
Instructions
1. 1. Preheat your oven to 325°F (165°C).
2. 2. In a large bowl, beat the cream cheese with an electric mixer until light and fluffy, about 2-3 minutes.
3. 3. Gradually add the sugar, beating well after each addition, until the mixture is smooth and creamy.
4. 4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and salt.
5. 5. In a separate bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
6. 6. Pour the cheesecake filling into the prepared crust and smooth the top.
7. 7. Bake for 40-45 minutes, or until the center is almost set. Turn off the oven and leave the pie in the oven for an additional 30 minutes.
8. 8. Remove the pie from the oven and let it cool completely on a wire rack, then refrigerate for at least 4 hours or overnight before serving.
Notes
For a richer flavor, you can add a tablespoon of lemon juice to the cheesecake filling. The pie can be stored in the refrigerator for up to 5 days.
