Sopa de Ajo (Spanish Garlic Soup) is a comforting, flavorful dish that’s perfect for chilly nights. This quick and easy recipe features a rich, creamy broth infused with the aromatic goodness of garlic, onions, and toasted bread croutons.
Ingredients
– 1/2 cup olive oil
– 8 cloves garlic, minced
– 1 large onion, diced
– 4 cups chicken or vegetable broth
– 4 slices day-old bread, cubed
– 2 eggs, lightly beaten
– 2 tablespoons sherry vinegar
– Salt and pepper to taste
– Chopped parsley for garnish
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and diced onion. Sauté for 5-7 minutes, or until the onions are translucent.
2. Pour in the broth and bring to a simmer. Add the cubed bread and cook for 10 minutes, stirring occasionally, until the bread has softened.
3. Slowly pour the beaten eggs into the soup, stirring constantly, to create strands of egg.
4. Stir in the sherry vinegar and season with salt and pepper to taste.
5. Ladle the soup into bowls and garnish with chopped parsley. Serve hot with crusty bread.
Notes
For a thicker soup, you can mash some of the softened bread cubes against the side of the pot. Experiment with different types of bread, such as sourdough or baguette, to find your preferred texture.
