Ingredients

– 2 lbs boneless, skinless chicken breasts

– 8 cups low-sodium chicken broth

– 3 large carrots, peeled and sliced

– 2 celery stalks, sliced

– 1 onion, diced

– 3 garlic cloves, minced

– 2 bay leaves

– 1 tsp dried thyme

– 1 tsp dried parsley

– 8 oz egg noodles

– Salt and pepper to taste


Instructions

1. – Place the chicken, broth, carrots, celery, onion, garlic, bay leaves, thyme, and parsley in a slow cooker. Cover and cook on low for 6-8 hours or high for 3-4 hours.

2. – Remove the chicken from the slow cooker and shred or chop it. Return the shredded chicken to the slow cooker.

3. – Add the egg noodles and cook for an additional 20-30 minutes, until the noodles are tender.

4. – Season with salt and pepper to taste.

Notes
