Ingredients
– 1 large eggplant
– 2 cloves garlic, minced
– 3 tablespoons tahini
– 2 tablespoons lemon juice
– 2 tablespoons olive oil
– 1/4 teaspoon ground cumin
– 1/4 teaspoon paprika
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F. Pierce the eggplant several times with a fork.
2. – Bake the eggplant for 30-40 minutes, until very soft. Allow to cool slightly.
3. – Scoop the flesh out of the eggplant and place in a food processor.
4. – Add the garlic, tahini, lemon juice, olive oil, cumin, paprika, salt, and pepper. Pulse until smooth and creamy.
5. – Transfer to a serving bowl and serve with pita bread, vegetables, or crackers.
Notes
For a smoky flavor, you can char the eggplant over an open flame before baking. Refrigerate leftover baba ghanoush in an airtight container for up to 5 days.
