Description
Shrimp Rice with Herbs (Meygoo Polo) is a delightful Persian dish that combines succulent shrimp, fragrant herbs, and fluffy rice for a quick and easy weeknight meal.
Ingredients
– 1 pound shrimp, peeled and deveined
– 2 cups long-grain white rice
– 1 onion, diced
– 3 cloves garlic, minced
– 1/4 cup chopped fresh parsley
– 1/4 cup chopped fresh dill
– 2 tablespoons olive oil
– 1 teaspoon ground turmeric
– 1 teaspoon ground coriander
– 1 teaspoon salt
– 1/4 teaspoon black pepper
– Lemon wedges for serving
Instructions
1. Rinse the rice in a fine-mesh strainer until the water runs clear. Set aside.
2. In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté for 3-4 minutes until translucent.
3. Add the garlic and shrimp to the skillet and cook for 2-3 minutes, stirring frequently, until the shrimp start to turn pink.
4. Stir in the turmeric, coriander, salt, and pepper. Add the rinsed rice and 3 cups of water. Bring the mixture to a boil.
5. Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
6. Remove from heat and stir in the chopped parsley and dill.
7. Serve the Shrimp Rice with Herbs (Meygoo Polo) warm, with lemon wedges on the side.
Notes
For added flavor, you can also stir in a tablespoon of butter or lemon juice just before serving.
