Ingredients
– 1 lb shrimp, peeled and deveined
– 2 avocados, diced
– 1 mango, diced
– 1/2 red onion, finely chopped
– 1 jalapeño, seeded and minced
– 1/4 cup chopped cilantro
– 2 tbsp lime juice
– 1 tsp lime zest
– 1 tbsp olive oil
– 1/4 tsp chili powder
– Salt and pepper to taste
– For the Lime-Chili Sauce:
– 1/4 cup Greek yogurt
– 2 tbsp lime juice
– 1 tsp honey
– 1/2 tsp chili powder
– 1/4 tsp salt
Instructions
1. – In a large bowl, combine the shrimp, avocado, mango, onion, jalapeño, and cilantro.
2. – In a small bowl, whisk together the lime juice, lime zest, olive oil, chili powder, salt, and pepper.
3. – Drizzle the lime dressing over the shrimp and avocado mixture and toss to coat.
4. – In another small bowl, make the lime-chili sauce by mixing together the yogurt, lime juice, honey, chili powder, and salt.
5. – Serve the shrimp and avocado bowls topped with the mango salsa and a drizzle of the lime-chili sauce.
Notes
For a spicier sauce, add more chili powder. You can also use a different protein like grilled chicken or tofu instead of shrimp.
