Description

Indulge in the ultimate crowd-pleasing meal with these easy-to-make, express Sheet Pan Quesadillas! Loaded with melty cheese, juicy fillings, and a crisp, golden crust, this life-changing recipe is perfect for game days, potlucks, or any gathering.

Ingredients

– 8 large flour tortillas

– 2 cups shredded Monterey Jack cheese

– 1 pound cooked and shredded chicken breast

– 1 cup diced bell peppers

– 1/2 cup diced onions

– 2 tablespoons taco seasoning

– 1 tablespoon olive oil

Instructions

1. Preheat oven to 400°F and line a large baking sheet with parchment paper.

2. In a medium bowl, combine the shredded chicken, bell peppers, onions, and taco seasoning. Mix well.

3. Lay the flour tortillas on the prepared baking sheet. Distribute the chicken mixture evenly over the tortillas, leaving a 1/2-inch border.

4. Sprinkle the shredded cheese over the fillings.

5. Fold the tortillas in half to create the quesadillas.

6. Brush the tops of the quesadillas lightly with olive oil.

7. Bake for 12-15 minutes, or until the tortillas are golden brown and crispy.

8. Remove from the oven and let cool for 5 minutes before slicing and serving.

Notes

For extra flavor, try adding diced jalapeños or a drizzle of chipotle sauce. You can also experiment with different fillings, such as shredded beef, pork, or a vegetarian option with roasted veggies.
