Description

Ingredients

– 3 pounds sweet potatoes, peeled and thinly sliced

– 2 cups heavy cream

– 1 cup shredded cheddar cheese

– 1/2 cup grated Parmesan cheese

– 3 tablespoons unsalted butter, melted

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F (190°C).

2. In a large bowl, combine the sliced sweet potatoes, heavy cream, cheddar cheese, Parmesan cheese, melted butter, garlic, thyme, salt, and pepper. Toss to coat the sweet potatoes evenly.

3. Spread the sweet potato mixture in a 9×13-inch baking dish.

4. Cover the dish with foil and bake for 30 minutes.

5. Remove the foil and bake for an additional 20-25 minutes, or until the sweet potatoes are tender and the top is golden brown and bubbly.

6. Let the scalloped sweet potatoes cool for 5-10 minutes before serving.
